Introduction

Development and adoption of agricultural product and food processing technologies is largely driven by such market requirements as quality improvement and cost reduction. However, commonly used technologies that utilise convection-based heating and chemical treatment have reached their efficiency limits. Moreover, some practical problems of long-term storage and improvement of organic purity can hardly be resolved by traditional technologies.

The objective of the proposed research program is development of fundamentally new technologies, which utilise microwave energy to handle in an efficient way such important issues such as:

  • productivity
  • yield stability in dry climatic zones
  • organic purity
  • cost efficiency

More than 12-yeasrs long research and commercial application have proved efficiency and flexibility of the microwave processing technologies in different climatic zones of Ukraine and Russia. The technologies can be applied to various agricultural and food products just by optimising the process parameters and equipment settings. It is important to emphasize, that these technologies are environmentally friendly. They are flexible and can be easily adapted to local climatic zones in different countries and locally cultivated varieties of agricultural products.
